Frozen Meal hack #2 is so simple and can be done all in one go. I just prepare a simple mustard and maple glaze and roast some salmon with frozen veggies. It’s my favorite sheet pan meal that checks all the boxes.

These frozen salmon filets from Whole Foods are so buttery and tender, I don’t mind that they’re not fresh from the case. In fact, they’re the only kind I buy because they’re sustainably farmed and I trust the strict requirements implemented to raise them. Wild salmon is also a great option but they tend to be a bit dry when cooked, so these are my absolute favorite!

The frozen veggies are the Country Potatoes with Haricot Verts & Mushrooms from Trader Joe’s. Let’s just say I’ve never met a potato I didn’t like, and these were bomb. The addition of green beans and mushrooms provided extra nutrients and everything was seasoned to perfection!

After roasting everything together, I added a layer of leafy greens and a squeeze of lemon for freshness. It’s the best weeknight meal when you have no idea what to make for dinner. It looks super gourmet too and comes together in like 20 minutes.

Recipe:
3 salmon filets (frozen and thawed from @wholefoods)
2 tablespoons coarse mustard
2 tablespoons maple syrup
1 teaspoon chili powder
1 clove garlic, minced
1 teaspoon kosher salt
drizzle of olive oil
1 bag of country potatoes, haricot vert, and wild mushrooms (from @traderjoes)
In a bowl, mix together mustard, maple syrup, garlic, chili powder, salt, and olive oil. Set aside.

On a baking sheet lined with parchment paper, pour out the frozen veggies leaving room for the salmon in the middle. Lay the salmon filets down and brush each filet with the maple mustard mixture.
Bake at 400 degrees for 10-12 minutes, tossing the veggies halfway through for even cooking.

Let it cool enough to handle and serve on plate with leafy greens and garnish with a wedge of lemon. Enjoy!
