Today, I’m sharing some of my favorite frozen meal hacks that are great for meal prepping or those last-minute dinner ideas. Since becoming a busy mom of 2, I’ve been able to integrate fresh ingredients with high quality, clean frozen items that help make cooking healthy meals for my family easy. The first hack that I’m doing is this miso dumpling soup. A hearty soup always warms the soul and this one is no different, except I’m using frozen items to make it come together quickly.

Frozen dumplings are a staple in my freezer and I usually have at least 2 bags available for emergencies. They’re one of Erisy’s favorite foods and I can always count on her to eat them steamed, boiled, or pan fried. This soup is also a great way for her to get some veggies in! I’m also using frozen mushrooms in this recipe because they’re an easy to toss into any dish and I’m not at risk of them spoiling if I don’t use the fresh ones up fast enough.

The miso ginger broth I’m using here is already pre-made in the box, but you can certainly just use chicken broth and infuse your own flavors if you prefer. I like that this one from Trader Joe’s is already delicately flavored and well balanced. Less cooking for me!

Honeysuckle - Miso Dumpling Soup

Recipe:

4 cups miso ginger broth
8-10 potstickers, frozen
1/2 cup broccoli
1 stalk baby broccoli
1 cup mushrooms, frozen
1 teaspoon soy sauce
1/2 teaspoon sesame oil

In a saucepan or pot, add miso ginger broth (or your favorite broth) and let it come to a boil on medium-high heat. Add potstickers, broccoli, and mushrooms and boil for 2 minutes. Add bok choy, soy sauce, sesame oil and turn off heat. Let the bok choy wilt down for a minute or two and serve into bowl.

This soup really does come together in less than 5 minutes and is so hearty and delicious! You have veggies, protein, carbs, all in one!
