Shrimp Noodle Stir Fry

Is it possible to get sick of noodles? I don’t think so… there’s always a way to make it slightly different and new! we’re making another easy one to kick off the week! 🍜 Shrimp Noodle Stir Fry

Protein of choice (I used 10-12 medium shrimp, deveined and peeled)

½ cup shitake mushrooms, sliced

½ cup cabbage, cut into 1-inch chunks

1 carrot, shredded

2 stalks green onion

3 cloves garlic, minced

2 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon mirin sake

1 tsp sugar

1 tsp sesame oil

½ tsp kosher salt

Ground black pepper powder

8 oz. long noodles of choice (dried udon, soba, spaghetti, anything works!)

  1. In a large pot of boiling water, cook noodles according to the package’s directions. Drain and rinse, set aside.

  2. In a bowl, mix the soy sauce, oyster sauce, mirin, sugar, sesame oil, kosher salt, and black pepper. Mix well and set aside.

  3. In a large wok, add a drizzle of oil and let it get hot. Add cabbage and carrot and stir fry for a quick minute until softened. Add mushrooms, garlic, green onions, and shrimp. Stir fry until the shrimp starts to turn pink. Add the noodles and pour in the soy sauce mixture.

  4. Mix everything together and serve. Top with cilantro or green onions. Enjoy!
