Apple Streusel Yogurt Cake

Do you prefer Cake or Pie for Thanksgiving dessert? I’m a cake person through and through and so I decided to make this Apple Streusel Yogurt Cake for my Thanksgiving dessert test run! I’d say it was pretty darn good and would be a hit for the Turkey dinner!


APPLE YOGURT CAKE

½ cup butter (room temp)

¾ cup sugar

2 eggs (room temp)

1 tsp vanilla

½ tsp almond extract

2 cups of flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1¼ cups yogurt

1 honeycrisp apple, chopped

STREUSEL

2 tbsp melted butter

2 tbsp brown sugar

2 tbsp chopped pecans

2-3 tbsp flour

1 tsp ground cinnamon

½ tsp salt.

  1. In a large bowl, beat together butter and sugar. Add in eggs and mix, one at a time. Then add vanilla and almond extract, mix until incorporated and set aside.

  2. In another bowl add flour, baking powder, baking soda, and salt. Mix together.

  3. Gradually add the dry ingredients into the wet ingredient. Fold in yogurt and honeycrisp apples.

  4. Transfer the batter into a lined and greased 8-inch (or 9 inch) spring-form pan.

  5. For the topping, mix all the streusel ingredients together.

  6. Top the batter with apple slices and streusel topping.

  7. Bake at 350ºF for 45-50 minutes. Remove and cool completely. Enjoy!
