Thanksgiving Sweet Potato Pie

Thanksgiving is almost here and while everyone loves pumpkin pie, I decided to make something slightly different. This is mine and my sister's favorite childhood side dish and dessert mashed up, a Sweet Potato Casserole Pie!

¾ lbs sweet potatoes, cooked and peeled

4 tbsps melted butter

¼ cup maple syrup

¼ cup brown sugar

2 eggs

½ cup half and half

1 tsp cinnamon

½ tsp nutmeg

¼ tsp ginger

¼ tsp cloves

pie crust

  1. In a bowl, add peeled and cooked sweet potatoes and mash until smooth.

  2. Add butter, maple syrup, eggs, half and half, cinnamon, nutmeg, ginger, cloves, and a pinch of salt. Mix again until combined.

  3. Pour into your favorite pie crust. Bake for 40 minutes at 350 degrees. Remove and cool.

  4. Add a layer of mini marshmallows and broil for 2 minutes or until golden brown. Keep a close eye on it! Enjoy!
