DIY Granola Recipe

Cereal is one of my favorite food. In college, I used to buy so many boxes of cereal and leave them on top of the fridge so I have a nice variety to choose from every morning. This was before I realized that I was eating straight sugar. Since then, I've switched over to eating oatmeal or toast for breakfast, but my love for cereal is still deep in my heart. That's why I decided to make some DIY granola to customize whatever or however I want!

This one is inspired by the "Love Crunch" chocolate and raspberries granola. That one is delicious, I must say, but way too much sugar for me in the morning. My version has a combo of maple syrup and brown sugar (not too much) that coats each oat grain for a nice crunch. I am really enjoying this right now and love that it has some chocolate bits in there as a treat. If you can, try to find dark chocolate chips as it gives a boost of antioxiant!

DIY Granola - Chocolate & Berries

3 ¼ cups Rolled Oats
1/2 cup pecans
1/3 cup slivered almonds
¼ cup flax seeds
1/2 cup Pure Maple Syrup
2 tbsps brown sugar
1/4 cup coconut oil
½ tsp nutmeg
½ tsp cinnamon
1 teaspoon kosher Salt
Add after oven
1 cup Dried cherries or berries
1 cup mini chocolate chips

  1. Preheat oven to 325 degrees. 

  2. In a bowl, mix all ingredients together. Mix mix mix

  3. Spread on baking pan lined with parchment paper. Bake for 30 minutes until crunchy.

  4. Take out half way to mix so it bakes evenly. 

  5. Let cool completely and mix in dried berries and chocolate chips.

Serve with milk or store in little jars for meal prep. Lasts 3 weeks in air tight container.
