Golden Deli's Famous Vietnamese Egg Rolls

These Vietnamese Egg Rolls are inspired by the famous Golden Deli located in San Gabriel Valley outside of Los Angeles. Great to get your Vietnamese food fix!

½ cup finely chopped jicama
½ cup finely chopped white onion
1 carrot shredded
3 tsp salt
1 lb ground pork
½ cup vermicelli (bean thread)
¼ cup chopped wood-ear mushrooms
1 tsp salt
1 tsp ground pepper
1 tsp sugar

  1. Place the jicama, white onion, and carrot a bowl. Mix in 3 tsp salt to extract the liquid. Set aside 5 minutes and drain out all the liquid.

  2. Place the de-hydrated vegetables in a large bowl. Add in the other ingredients and mix together until the filling comes together.

  3. Wrap 2-3 small scoops of the filling in wet rice paper or wheat paper, roll, seal, and fry in oil (300-350ºF) for about 7 minutes until crispy and golden brown.

  4. Serve with fresh lettuce, herbs, and fish dipping sauce. Enjoy!
