Mandarin Orange Baked Oatmeal

Baked Oatmeal is having its moment right now! This Mandarin Orange Baked Oatmeal is like a bread pudding, it’s cozy and comforting, and a great breakfast to wake up to.

2 cups old fashioned rolled oats
½ cup sliced almond
½ cup brown sugar
1 teaspoon cinnamon
¼ teaspoon cardamom
1 teaspoon baking powder
½ teaspoon sea salt
1 cup milk
2 eggs
¼ cup mandarin orange juice
3 tablespoons melted butter
1 teaspoon vanilla extract

  1. Preheat the oven to 350 degrees.

  2. In a large bowl, combine the rolled oats, sliced almonds, brown sugar, cinnamon, cardamom, baking powder, and sea salt. Mix well and set aside.

  3. In a bowl or pitcher, add the milk, eggs, mandarin orange juice, melted butter, vanilla extract. Mix well until the mixture is smooth. Pour the liquid into the oats mixture and mix well.

  4. Transfer the oats mixture into a greased 8x8 baking pan or lined with parchment. Bake for 35-40 minutes or until golden brown.

  5. Remove from oven and let it cool. Serve with a dollop of Greek yogurt and enjoy!
