Salmon Sushi Bake Rice Bowl

Salmon Sushi Bake Rice Bowl – This is hands down one of my favorite meals to make in a pinch. I use the flakiest, tender, wild caught Alaskan salmon fillets and bake it in a delicious ginger honey soy glaze.

1 lb salmon fillets

Rice

2 cups broccoli florets

Ginger Honey Soy Glaze
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon mirin sake
1 teaspoon rice vinegar
1 teaspoon sesame oil
2 garlic cloves, minced
1 teaspoon ginger, grated

  1. Preheat oven to 375 degrees F

  2. Mix everything for the honey soy glaze in a bowl and set aside.

  3. In a baking pan or dish, add salmon fillets and pour the sauce right on top.

  4. Bake for 15 mins. Add 2 cups of broccoli florets onto baking pan and finish roasting for another 10-15 minutes or until golden brown.

  5. Serve over rice, favorite toppings, and enjoy!
