Strawberry Shortcake Energy Bars

A great option for no cook breakfasts are grab-and-go energy bars. I’m making Strawberry Shortcake Energy Bars that’s not only satiating but everything is made in the handy food processor.

¾ cup cashew

¾ cup walnut

10 large dates, pitted

1 tbsp flax seeds

1 tbsp chia seeds

¼ cup shredded coconut

½ cup nut butter

pinch of salt

1 tbsp maple syrup

1 tsp vanilla extract.

1 cup freeze dried strawberries

  1. Add your nuts into the food processor and pulse until it is a fine texture.

  2. Add in the pitted dates, flax seeds, chia seeds, shredded coconut, nut butter, salt, maple syrup, and vanilla extract. Pulse until combined. Once things are looking like they are coming together, add in the freeze-dried strawberries and mix for another 30 seconds

  3. In a lined pan with parchment paper, transfer the mixture, spread out, and flatten it. Let it chill in the fridge for about an hour.

  4. Cut it into 8 bars. Enjoy!
