Apple Sauce Streusel Coffee Cake

This Apple Sauce Streusel Coffee Cake made the entire kitchen smell like the warmest cozy, cinnamony sweet bakery in the woods vibes. My kitchen really does come alive again in the Fall. I don’t love chunks of apples in my baked goods unless of course it’s a pie, so decided to use applesauce instead and it made the cake incredibly moist and soft. I had this for breakfast for 3 days in a row with some coffee and it was the best!

Apple Sauce Coffee Cake
1 1/4 cup unsweetened applesauce
½ cup unsalted butter
½ cup granulated sugar
½ cup brown sugar
2 eggs, large
1 tsp vanilla extract
2 cups all-purpose flour
½ tsp kosher salt
1 tsp baking soda
½ tsp cinnamon
½ tsp apple pie spice

For the streusel-
2 tablespoons unsalted butter
¼ cup all purpose flour
2 tablespoons brown sugar
½ tsp cinnamon
Pinch of salt

  1. Mix everything for the streusel together until crumbly.

  2. In a large bowl, cream the butter and sugars together until light and fluffy. Next, add in the eggs, applesauce, vanilla, and mix until combined.

  3. In a separate bowl, add the flour, salt, baking soda, cinnamon, and apple pie spice.

  4. Add the dry ingredients to the wet in 2 parts, beating after each addition. Finish off with the spatula then pour into a greased pan dusted with flour.

  5. Add the streusel on top and gently press down into the batter. Bake at 350 degrees for 16-18 minutes until golden brown. Enjoy!
