Vietnamese Coffee Granola

If you enjoy cereal and drink coffee in the morning, you will love this Vietnamese Coffee Granola!

3 cups rolled oats

1 cup cashews

1 cup pecans

2 tbsp chia seeds

¼ cup pumpkin seeds

1 tbsp ground espresso

½ tbsp ground cinnamon

½ tsp ground cardamom

pinch of salt

¼ cup melted coconut oil

1 can condensed milk

  1. Preheat oven to 325 degrees.

  2. Combine all ingredients in a large bowl and mix until combined and distributed evenly.

  3. Transfer the granola mixture to a baking sheet lined with parchment paper.

  4. Bake for 40-45 minutes until it is nice and toasty. Make sure to give it a nice mix halfway through.

  5. Let it cool completely, store it in an airtight container and enjoy!
