Pumpkin Pie Oat Bars

CRUST AND OAT CRUMBLE

1½ cup rolled oats

1½ cup all purpose flour

½ cup dark brown sugar

½ teaspoon baking soda

¼ teaspoon salt

¾ cup unsalted butter, melted

PUMPKIN PIE FILLING

1 cup pumpkin puree

½ cup dark brown sugar

1 tbsp pumpkin pie spice

1/2 tbsp vanilla extract

pinch of salt

1 egg

¼ cup heavy cream

  1. In a large bowl, combine rolled oats, flour, brown sugar, baking soda, and salt. Then add in the melted butter, give it a mix until well incorporated. You’ll get a moist crumble.

  2. Take ⅔ of the crumble mixture and press it into an 8x8 baking pan to form a tight crust. Reserve the rest of the crumble (~1 cup) for later. Par-bake the crust at 350 for 15 minutes.

  3. Meanwhile, mix all the ingredients of the pumpkin pie filling, except the heavy cream. Once mixed well, add in the heavy cream to thin out the filling.

  4. Take out the crust from the oven, pour in the pumpkin pie mixture. Spread it out evenly. Then sprinkle the oat crumble on top.

  5. Put it back into the oven at 350 for 35-40 minutes.

  6. Allow it to cool and set for 2-3 hours. Cut up into bars. Enjoy!
