Sheet Pan Salmon

This sheet pan salmon is infused with vitamin C using an orange marmalade, an important antioxidant that supports your immune system which is particularly helpful for the upcoming cold and flu season.

1 lb salmon

2 cups broccoli florets

1 small sweet potato, cubed

2 cups asparagus, cut into 1-inch pieces

Glaze

1 Sunkist® Cara Cara orange

¼ cup soy sauce

1 tbsp honey

½ tsp salt

3 garlic cloves, minced

  1. Cut the orange in half and slice half of it into thin slices. Any large slices can be cut in half.

  2. Add to a bowl and combine with soy sauce, honey, salt, and garlic cloves. Mix well.

  3. On a sheet pan lined with parchment paper, coat the sweet potatoes with some oil and salt and pepper and bake first for 5-7 minutes at 400 degrees. Remove from oven and carefully add veggies and mix well.

  4. Create a middle section to add the salmon. Pour the glaze on top and any extra can be used to pour on top of the veggies.

  5. Bake for another 15-18 minutes at 400 degrees until salmon is cooked. Remove and enjoy!
