Japanese Mirin Soy Glazed salmon

This mirin soy glaze is similar to teriyaki in texture and sweetness but in my opinion, is so much better! The mirin gives it a little more depth from the alcohol and is perfect paired with salmon. Reminds me of something I’d eat at an izakaya.

2 - 4 cuts of salmon
2 tbsps mirin - a japanese rice cooking wine
2 tbsps of soy sauce
1 tbsps of brown sugar
1 tsps of rice vinegar
¼ tsp of sesame oil

Mix it up and set it aside. 

I’m using this escallopino cut from the salmon loin that reminds me of what I’d get from a Japanese restaurant.  In a non stick pan, I’ll just sear up each side - and this cut only takes minutes to cook.

Remove it from the pan and then i’ll add our glaze. I’ll let it cook for a minute on boil so the sauce can thicken up and then we’ll take the glaze and brush it over our salmon. I’m going to pair it with  rice and green veggies. Garnish with some slivered green onions and we have an easy balanced bowl for a solid meal.
