Irish Potato Leek Soup

I love potatoes in all shape and form! You will love this hearty bowl of Irish Potato Leek Soup!

1 leek, chopped
1 tbsp unsalted butter
2 russet potatoes, peeled and chopped
1 clove garlic, minced
4 cups chicken or veggie stock
1 cup milk (whole or 2%)
¼ cup aged cheddar, shredded
salt and pepper to taste

Toppings
aged cheddar
bacon
sour cream
green onions

  1. In a large pot, add unsalted butter. Melt on medium heat and add leeks.

  2. Sauté for 5 minutes until it’s soft and caramelized. Add the garlic and sauté for another minute. Add potatoes and chicken stock and simmer for 30 minutes until potatoes are tender.

  3. Add the milk and with an immersion blender, blend until desired consistency. I like it creamy but chunky so leave a few pieces unblended. You can make it super smooth too if you’d like.

  4. Stir in ¼ cup of aged cheddar and season with some salt and pepper. Ladle into a bowl and add your favorite toppings! Enjoy!
